Ingredient Selection Tips
- Select the small or medium-sized carrots and parsnips. It is easier to cook and they are also tastier. Make sure there are no “hairs” and cracks.
- Choose the one with firm skins and with fresh dark green stalks.
- If you get these two during the harvest, you can store them in the chiller by cutting the green stem. Put a paper towel around it to keep its moisture. It can stay there for a week or two.
