Some fun facts.
Did you know that carrots is a relative of fennel, parsley and cumin? Did you also know that sweet potato is also called as kumara? I just learned when I was searching for new combinations of puree ingredients for our little ninja. Also learned that courgette is zucchini! Ahhhh the wonders of finding new names for the usual veggies we have. For this one, let me use the new found names I learned cause it is great for my culinary prowess.
So for this one, I tried to mix the available veggies in our kitchen. I like sweet potato and carrots as it is quite cheap and very nutritious too!
For this mixture, you can do it pureed separately or you can do mix it all together.
Ingredient Selection Tips
- Select the firm veggies. Make sure there are no “beards” growing out of the carrots and sweet potato. When you buy this produce, you can store it after a week or two. But do not wash them yet since it will deteriorate easily.
- For sweet potatoes, the color of the flesh changes from orange to purple. You can choose the orange one since it is easy to find and it’s cheaper of course.
- Courgette/ Zucchini/ Summer pumpkin abounds in the markets now. Better to choose medium-sized one for one serving. Select the firm one and with no hairs.
- And if you can find locally produced veggies like this in the market or through your locally supported farmer, then buy them when they are in season.
